JD All Dressed Up

Huge, huge blessing this last week! A friend from church took JD to a fancy store and bought him a full suit, complete with shirt and tie! This is JD before taking off to the church youth Valentine's Party...looking pretty spiffy there!

So hard to get him to smile, but
I think I see a little one there...

There's the tie...none of know how to
actually TIE the thing. Guess I need to learn!
Maybe on youtube or something...

JD's Birthday

I realized the other day that I completely forgot to post about JD's 17th birthday, which was January 27th...it fell in the middle of a very strange couple of weeks of sickness and busyness, thus the forgetfulness on my part! I wish we could have planned something bigger, but at the end, it was JD's choice to only have a family celebration...maybe next year. I made vanilla ice cream in our new ice cream freezer and baked pound cake; all very yummy!

Sorry the picture is a bit dark, none of them turned out too well and this one was the best. Interestingly, Jkaile ended up being quicker on the draw than JD when it was time to blow out the candles! He just loves to blow out "fire"! We all had a good laugh at that. At any rate, I think JD enjoyed his birthday celebration and was pleased with all his presents. :)

To give a bit of background...JD (short for José David) is Miguel's youngest brother. Miguel has another brother and one sister, but the older siblings were all in their early 20s when JD was born. JD spent a year living with us in 2005-2006 while we were in Venezuela, where he caught up with his schooling (I taught him at home during that time) and learned English .

Jojo had a special place in JD's heart!

Two brothers...

JD came to live with us again this last summer. Our hope is that he can stay with us until he graduates from the MK school here in two years. His dream is to attend college in the U.S. and probably study something to do with computers, graphic design, and/or engineering.

New Shoes!

To be completely honest with you, money's been tight this semester, which tends to create stress...and yet God is good to provide. Not always how or when we think He should or will, but we have yet to go hungry and we've been able to pay our bills. This last week, we were tremendously blessed by a local Mexican church here in the city who graciously bought all of the kids in our family brand new shoes! at the mall! And not only for our family, but they bought new shoes for the children of several missionary families! A true blessing and encouragement to all of us!

At the shoe store...

Jkaile...

Trying on the shoes...

After buying us the shoes, we were treated to
supper...

Our family chose gorditas...not from
Doña Tota, but still delicious!

And after supper, ice cream bars from Dairy Queen!
A real treat for the kids!

Family Fun Day Part IV-Rocks and More Rocks!

Miguel continues to work on the landscaping and the rock grill at our house here in town, so after Family Fun Day we took the chance to go get some more rocks! Out behind the Rancho Siloé, there is an old river bed where the rocks are 'sifted' to remove gravel and sand to use in construction. What's left are piles and piles of rocks in all shapes and sizes...pretty much 'paradise' for rock hounds like us! :D

Hard to choose...

JD on top of the world...

So much fun!

Jkaile really loves it out there and it was hard
to keep track of him since he kept wandering off...
just too many rock piles to climb on!

Where's the baby?!

Dust devil came through while we were there...
you can see the buildings of Rancho Siloé in the distance.

Beautiful scenery!

A rather colorful little guy...

Long day! We were all pretty
happy to get back home
and get to sleep!

Family Fun Day Part III-Afternoon Activities

Miguel and the guys took the opportunity
to throw a few rounds of horseshoes...

The big afternoon activity was tug-of-war...
pull, Gracia, pull!!!

Micah's group won their round!

Apparently, Micah got a few 'toritos' in
his hand throughout the day...'toritos' are
thorns, the word literally means 'little bulls'
because of the shape of the thorns.

Even "Grandma" showed up for the tug-of-war games!

JD getting a kick out of watching "Grandma"!
Good to see a smile on his face!

Goody bags for all participants!

After I took this picture, I noticed Gracia's
top teeth were bleeding, but it's only because
they are loose! Tooth fairy should be visiting soon...

Jojo on the swings...

Snow? In Mexico?

What? Snow in Mexico? In October?! Typically, the word "Mexico" brings up thoughts of sunny beaches in Cancún or lush tropical jungles...but there are actually a few places in Mexico that get pretty cold and may actually snow from time to time! And we live in one of those places...granted, October is really early for snow and since the temperatures had been up in the 70s the day before, this really did take us quite by surprise! But yeah, last Thursday, we woke up to sleet and snow and really, really cold temperatures!

This was JD's first experience with snow!

After running around outside in shirt-sleeves, it didn't
take long for him to decide that he needed to get dressed
appropriately for the weather!

There was enough snow piled up in the corners
and on the trampoline to make snowballs!

A very small snowball...

Even Jkaile got a snowball!
He knew what to do with it, too, since
he promptly threw it at Micah!

But alas, all fun must end at some point and the
kids had to get ready to go to school...they
were still pretty excited, though!
Micah was convinced it had snowed just for his
birthday! I was thankful that it did clear up
enough to mostly have his birthday party outside
that afternoon...stay tuned for my next post
for party pics!

Remember my pretty flowers? Poor things
out there in the snow...

English Class

Pretty much everywhere we go, it is common for people to request that we 'teach them English'. But rarely have we been able to actually conduct an English class simply because it is very hard to fit into our schedule! Recently, though, we've been able to meet somewhat regularly with a group of young people from our church for some English classes.

One night last week, four of our five students came over for an English Night complete with pizza and a rousing game of Apples to Apples...here are Erick, Pamela, Lili, and Xavier...Raul couldn't make it that night...

It's been a really neat way to connect with these young people
and a great opportunity for discipleship as well!

Chile Relleno Step-by-Step

I tried my hand at making Chile Relleno (literally 'stuffed chili') this week before Delia left so that she could say she had tried it. They turned out really yummy according to all who tried them, so I'm counting them a success! :D Although as I read through the recipe I later found in a book, there were a couple of things I didn't do 'right'. As with any recipe, though, I'm sure there are variations in the methods of preparing chile relleno...

The chilis used for chile relleno in this region are the
california chili or 'chilaca', although I've heard
that the poblano chili works as well.
First thing to do is toast the chili over the gas flame until
the skin begins to separate from the 'meat' of the chili.
Parts of the chili will turn a bit black, that's okay.
The flame should be low to medium high...too
high and they might catch on fire like one of mine did...

Once you remove the chili from the fire, place it in a plastic
bag for a few minutes, then take it out and
remove the skin. The skin should come off
relatively easily if it has been toasted long enough.

Cut a slit in the side of the chili and remove as many
of the seeds as you can. Chilacas are not very spicy,
but sometimes the seeds can be.
Stuff the chili with a strip of cheese...other fillings
can be used as well, such as ham and cheese,
tuna, etc. I used a toothpick to close the opening in the
chili, but I don't think you would have to.
Lightly salt and pepper the chili before
coating it with some flour.

I used the whole egg this time, but it would probably
work better to use just the egg whites since they whip
up better. But anyway, beat the eggs or egg whites
until they are frothy.
Dip the chili in the egg right before frying.
It is best to use a shallow bowl for this.

Fry the chili in hot oil (coconut oil would be awesome
for this recipe) until golden brown.
It won't take long, mine were done in a jiffy!

Set the chili relleno on a napkin or paper towel
to soak up some of the oil and then
enjoy!

JD had two! I think he liked them...
